Nutritional Tips

  1. Monk Fruit Sweetener: I recommend using this sweetener anytime sugar is on the ingredient list. This sweetener has zero calories as well as a zero-glycemic index without any odd after taste. I have used monk fruit sweetener in so many ways, and it has never let me down. I highly suggest using this sweetener because the only sugar your body is absorbing is the natural sugars found in the fruit.
  2. Great Lakes Collagen Powder: I like adding collagen to soups, teas, and now compotes! It’s a great way to give your hair, skin, and nails a boost as well as get some extra protein.

Peach Compote

Ingredients:

  • 4-5 peaches, peeled and chopped
  • ⅔ cup monk fruit sweetener
  • 1 tsp Vietnamese cinnamon
  • ½ lemon, juiced
  • 1 tsp vanilla extract
  • 1 cup of water

Instructions

  1. Place all ingredients in a medium saucepan and bring to a boil.
  2. Turn heat down to low and stir often.
  3. Once the peaches are cooked through, and the water has turned to a syrupy texture remove from heat.
  4. Let cool for a few minutes in the pan.
  5. Add to a glass jar and place it in the fridge.

Mixed Berry Compote

Ingredients

  • 6 oz raspberries
  • 6 oz blueberries
  • ⅔ cup monk fruit
  • ½ lemon, juiced
  • 1 cup of water

Instructions

  1. Place all ingredients in a medium saucepan and bring to a boil.
  2. Turn heat down to low and stir often.
  3. Once the peaches are cooked through, and the water has turned to a syrupy texture remove from heat.
  4. Let cool for a few minutes in the pan.
  5. Add to a glass jar and place it in the fridge.

Tip: You can use more or less of each berry or use two berries instead of three.

Cinnamon Apple Compote

Ingredients

  • 3-4 Granny Smith Apples, peeled and chopped
  • ⅔ cup monk fruit sweetener
  • 1 tsp Vietnamese cinnamon
  • ½ lemon, juiced
  • 1 cup of water

Instructions

  1. Place all ingredients in a medium saucepan and bring to a boil.
  2. Turn heat down to low and stir often.
  3. Once the apples are cooked through, and the water has turned to a syrupy texture remove from heat.
  4. Let cool for a few minutes in the pan.
  5. Add to a glass jar and place it in the fridge.

The Great Divide

I created this parfait when I couldn’t decide which compote I wanted. Then I realized why choose?! You can use any two compotes you have on hand for this recipe.

Ingredients

  • ½ cup Stony Fields Plain Probiotic Yogurt
  • A few spoonfuls of Peach and Mixed Berry Compote
  • ½ cup Nature’s Path Organic Honey & Almond Granola
  • A handful of toasted coconut
  • A handful of chopped pecans

Instructions

  1. In a bowl, start by adding the yogurt.
  2. On one side of the bowl, add peach compote and the other mixed berry compote.
  3. Add granola, toasted coconut, and pecans.Enjoy!
