Lemon Chicken Orzo Soup
May 23, 2020In my opinion, any noteworthy soup begins with bone broth. Not only is there a buttery texture to the soup but it is also nourishing to the gut and joints. Buying bone broth can be expensive and the quality questionable. My solution is to make your own. The Instant Pot makes cooking bone broth a cinch! If you don’t have any chicken broth you can replace it with bouillon instead. This recipe uses both bouillon and broth. I find the nutrients and texture of the broth merged with the flavor of the bouillon is a win/win! All bouillons are not created equal though and many are full of sodium and unhealthy preservatives. That’s why I prefer Better Than Bouillon Brand because they use 1/3 less sodium than other brands, they offer organic options, and since the chicken or vegetables are roasted it adds another flavor profile to your recipe.
Enough chatting- let’s cook!
- 3 cups chicken, shredded
- 6 cups of bone broth
- 3 cups water with 3 tsp garlic bouillon broth
- 3 cups water with 3 tsp chicken bouillon
- 1 white onion, chopped
- 3 celery sticks, diced
- 3 cloves garlic, minced
- ½ cup carrots, julienne
- 2 cups kale, chopped and stems set aside
- 1 cup orzo
- ¼ cup lemon juice plus slices for garnish
- 1 tbsp avocado oil
- 1 tbsp bay seasoning
- 1 tbsp poultry seasoning
- ½ tsp white pepper
- ½ tsp salt
- ½ tsp black pepper
- 2 tbsp Great Lakes Collagen
- Sauté chopped onion in avocado oil until translucent, 2-3 minutes.
- Add carrots, garlic, and celery. Sauté for another 2-3 minutes
- Add all seasonings except; salt, white pepper, and black pepper. Sauté for 1 minute.
- Add chicken bone broth, garlic bouillon, and chicken bouillon and bring to boil.
- Lower heat to medium, and add orzo.
- After 10 minutes add shredded chicken and kale. Cook for 2-3 minutes longer.
- Sauté kale stems in a bit of salt and pepper. 5-7 minutes.
- Remove soup from heat and add lemon juice.
- Place lemon garnish in each bowl. (This is a functional garnish because while it is pretty it also boosts the flavor of lemon in each bowl so be sure to include this garnish.)
