Mom’s Chicken Salad

- A great way to utilize your ingredients and get more benefit out of the time you spend in your kitchen is to buy a whole chicken and roast it! Use the meat in this recipe and use the carcass to make Chicken Bone Broth in your Instant Pot! You also can roast a few chicken breasts in the oven as well.
- The mayo that you choose is so important! Each mayo has a different twang to it. I recommend either Sir Kengsington or Duke’s Mayo because their ingredients are of cleaner quality.

Ingredients
- 1.5 lb of roasted chicken, chopped
- 2 springs celery, chopped
- ¼ cup slivered almonds
- ½ cup mayo
- 1 tsp poppy seeds
- 2 tsp chicken bullion paste
- 20 red grapes, cut in halves
Instructions
- Place roasted chicken, celery, slivered almonds, and grapes into a mixing bowl. Mix until well blended.
- In a separate bowl whisk together mayo and chicken bullion paste until blended.
- Add poppy seeds and mix.
- Chill for 1 hour before serving.Enjoy!
